Athletic Trainer's Dish of the Week: Chicken Parmesan Pasta

Chicken Parmesan Pasta

INGREDIENTS:

13.25 oz. box whole wheat rotini pasta

16 oz. pkg. frozen broccoli

8 oz. grilled chicken breast (cubed)

 2 TBSP olive oil

1/2 cup grated parmesan cheese

1 tomato (cubed) 

DIRECTIONS:

Boil pasta in water until tender. Cook cubed chicken in a separate skillet. In a microwave safe dish, cook broccoli on high for 5 minutes. When the pasta is tender, strain. Return pasta to the pot and add olive oil and parmesan cheese. When the pasta is well coated with the olive oil and cheese, combine the chicken, broccoli, and cubed tomato with the pasta.
